The restaurant, which is alternately bistronomic at lunch and gastronomic in the evening, welcomes you to the heart of its magnificent chartreuse.
Located in the lovely city Le Bouscat, a few minutes away from Bordeaux historical center, our beautiful chartreuse offers 8 rooms and suites hidden at the end of a lush garden.
The bistronomic restaurant for lunch and gastronomic restaurant for dinner offers a creative, seasonal menu in a timeless setting.
Opened to the public in August 2021, MAISON PAVLOV is an "histoire de coeur". Mary Henchley and Maxime Rosselin imagined and conceived the hotel putting wellness and gastronomy in its central focus.

Our chefs use our garden to complement the produce of our growers by collecting flowers, aromatic plants and fruit.
Our cuisine is refined, gourmet and respectful of fauna and flora.
The Bois du Bouscat beehives very close to the hotel offer the best local honey for our breakfast. And the bees pollinate our garden for an even more.
The gastronomic restaurant is open for dinner from Tuesday to Saturday from 19h30 to 21h30 and for lunch on Saturday from 12h15 to 14h00.

Our ecological responsability
We know that our planet needs us. At Maison Pavlov, we have put in place a number of measures to help us contribute to this collective effort:
- Our garden follows the principles of permaculture, and is maintained without chemicals.
- We collect water from our well for watering the garden and for the water you drink in the Hotel and to the restaurant. (still or sparkling)
- Our paint is environmentally friendly.
- Some of our hospitality products come in recyclable containers, and we limit the use of small containers by using refillable bottles for our shampoo and shower gel.
- We give a second life to your used soaps via the Unisoap association.
- Our household products and the treatment of our linen are made with the most natural products possible.
- We sort our waste and compost our kitchen waste to naturally improve our garden.
- We use LED light bulbs.
- We cook with responsible products, most of which are organic, local and in season.
